Gut Loving Recipe: The protein & Fibre one
Serves 1
Prep: 15mins
Over 1/3 of the recommended daily fibre intake.
Ingredients:
Odd pods 100g
Broccoli stalks diced finely 10g*
Yellow courgettes diced into chunks 10g
Vine tomatoes diced in 1/2 10g
Rocket 20g
Beetroot diced into chunks 10g
Fresh mint torn into pieces 10g
Italian herbs 1tsp
Harissa spice 1tsp
Olive oil 1tbs
1/2 a lemon (juice only)
*10g = small handful
Method:
Add the rocket base into a colourful bowl of choice.
In a separate bowl add all remaining fresh and raw ingredients and mix well to blend all herbs, oils and juice.
Pour the mixed ingredients onto the bowl of rocket and finish with any lemon juice left or a pinch of pepper.
Now enjoy this summer fresh bowl hitting every spot where the chickpea texture is perfection, its an ideal every day go to, devour it & repeat it.
