Gut Loving Recipe: Prune Energy Balls

A tasty and healthy snack to get you through that mid afternoon slump, or to have with your morning coffee! We think you’ll love them.

Makes 18 balls

Ingredients:

80g prunes

3 tbsp boiling water

1/2 small banana

10g sunflower seeds

50g rolled oats 

Method:

Put the prunes and boiling water into a food processor or blender and blitz until a smooth paste is formed. 

Mash the banana with a fork, then add the prune paste, mixing the ingredients together. 

Pour in the sunflower seeds, and rolled oats. Combine until a sticky ball is made. The consistency will be sticky but packed together. 

Divide the mix into 18 and roll each one into a ball using your hands. If the mixture is a little sticky, make sure your hands are wet, as it will make it much easier. 

Transfer the balls onto a plate and place in the fridge for 2-3 hours until they become much firmer and easier to handle. 

Enjoy as a sweet treat or simple snack to get you through to the next meal!
