Gut loving recipe: cheesy vegan popcorn

Popcorn kernels are a great staple for the kitchen cupboards. You can store them for ages and they go much further than you think! Instead of the usual sweet or salted recipe, this one uses nutritional yeast, making it not only really tasty but also providing you with a source of vitamin B12. Fun food can be nutritious too!

Ingredients

2 tablespoon rapeseed oil (or coconut oil if you don’t have)

1/2 cup popcorn kernels

1/3 cup nutritional yeast

1 teaspoon salt flakes

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder


Method

For this you will need a pan with a lid.

Set your hob to a medium heat and add the rapeseed oil. After a couple of mins add the kernels. Make sure to shake the pan around so that all the popping corn is coated in oil. Continue at a medium heat until you hear the corn starting to pop (make sure the lid is always on!). Whilst they are popping, place the nutritional yeast, salt, smoked paprika and garlic flakes into a large tupperware or container with a lid.

Once the popping has slowed and you don’t hear anything for about 15 seconds, remove from the heat and empty the popcorn into the tupperware. Add a lid and shake around to cover the popcorn in the seasoning. Remove lid and enjoy!
