Gut loving recipe: Flaxseed & berry bircher muesli

This super easy recipe is perfect for weekday meal prep and provides a generous portion of fibre to start your day. You can increase the servings easily and store them in the fridge until you need them. Old jam jars make the perfect vessel for these!


Ingredients

Serves 2

80g rolled oats / gf oats

1 tablespoon chia seeds

2 tablespoon ground flaxseed

1 teaspoon vanilla essence

1 teaspoon cinnamon

300ml oat milk

100g / 2 handfuls of frozen berries

To top

Pumpkin seeds

Sunflower seeds

Linseeds

30g blueberries

All ingredients together in a bowl until well combined. If eating straight away, allow 15 mins for the oats to soak up the liquid. Portion into containers or bowls and then sprinkle seeds and blueberries on top. If you have any spare fresh fruit feel free to add into the recipe, the more the merrier.
