Gut Loving Recipe : Simple Miso Aubergines

A quick dinner or side for me. I love how you can do all the prep in five minutes, pop them in the oven (letting the delicious cooking smells drift!) and 40 minutes later you’ve got a hot tasty meal.



Ingredients

2 aubergines

Paste ingredients:

2 tbs of miso

2 tbs of olive oil

2 tbs soy sauce (I use tamari)

A sprinkle of chilli flakes


Method

Preheat your oven to 190.

Mix your paste ingredients together. I normally do this in a mug for ease.

Cut your aubergines into halves and score. Now spread you paste over the aubergines with a light cover. Pop in the oven and check on them about 40 minutes later.

I normally serve these with some brown rice or chop up to add into a salad.
