Gut loving recipe: Inulin oat bread
Bored of breakfast? Fancy some baking? Try our delicious oat bread recipe! It’s super simple and with fibre from oats and Eat Troo inulin from our May box, it’s sure to keep you going from breakfast through to lunch without the temptation of snacking.
Ingredients
1 1/2 cups oats
1 cup plain four (we use Doves Farm gluten free)
1/2 teaspoon bicarb of soda
1 teaspoon ginger (powder)
1 1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup of frozen berries (we recommend blueberries)
2 tablespoons Eat Troo Inulin syrup
1 cup oat milk
1/3 cup rapeseed oil
1 teaspoon vanilla essence

Method
Preheat your oven to 180 degrees. Mix together all of the dry ingredients in a bowl, making sure they are properly combined. Next, add the berries, inulin, oat milk, oil and vanilla essence then mix. Empty the batter into an oiled loaf tin and bake for 35 - 40 minutes. Once out of the oven, leave to cool then slice and enjoy with yoghurt and compote.
