Gut Loving Recipe - Cinnamon and banana oat slices

Ingredients:

140g oats (*GF or normal)

1tsp baking powder

2tsp cinnamon

2 ripe bananas

1/4 cup maple syrup

1/4 cup of peanut butter

1tsp vanilla extract

1tbsp flaxseed meal

1/2 cup plant-based milk

1/4 cup mixed seeds/fruit (optional)

Method:

1. Preheat your oven to 180 degrees and line your baking dish with parchment paper.

2. In a bowl, mix together your oats, baking powder, cinnamon and mixed seeds and fruit (if using) to form your oat mixture.

3. In a separate bowl, mash both ripe bananas, and add 1/4 cup of peanut butter until combined.

4. In a small bowl, mix 1tbsp of flaxseed with 3tbsp warm water and leave for 5 minutes until gelatinous.

5. Add the vanilla, flaxseed, and 1/4 cup of maple syrup, to your banana mixture.

6. Add your plant based milk and stir until batter is smooth.

7. Add dry ingredients (oat mixture) to the wet ingredients and mix thoroughly, before pouring the mixture into your prepared baking dish.

8. Bake for approximately 25 minutes. Note: The bars are quite soft, so if you prefer a harder texture. then bake for slightly longer.

9. Cut into squares and enjoy both warm or cold!
